Delicious Gluten, Egg, Dairy & Yeast-FREE Pancakes!

I knew it was a pancake day as soon as I woke up today. I haven't made any for AGES! I've tried a lot of different gluten-free, egg-free, dairy-free pancakes & many fall flat! But this one I really liked & the entire family enjoyed them! Few ingredients, add to blender (I used my Nutribullet) & just pour straight into the pan. Ingredients: Gluten Free Oat Flour (1 Cup)* Almond Milk (1/2 Cup + some) Maple Syrup (2 Tablespoons) Ripe Banana (1) Vanilla Extract (1 Teaspoon)* Baking Powder (1 Teaspoon) Sea Salt (1/4 Teaspoon)* I wanted to add some frozen wild blueberries to the batter but the kids insisted on adding chocolate chips, we added about a few little nibs (vegan Enjoy Life mini chips brand) on each pancakes when they were in the pan.


Add all ingredients to a blender & run until smooth. Add more almond milk if need be. Use coconut Oil for cooking them 2-3 min per side. I had some strawberry jam in the freezer that I made some time back (just adding frozen organic strawberries to a pan + organic pure maple syrup & once melted, I added to the blender to run, you can just mush it with a fork too).
