Healthy Waffles!

I was so happy when I made the below recipe with my new ceramic (less toxic chemicals than other non-stick surfaces) waffle-maker yesterday. I love love love the texture of the waffles and the flavor (lacking some sweetness but I added none since we used maple syrup to it after).



3 Tablespoons Flax Seeds (ground)

6 Tablespoons Filtered Water


3 Cups Gluten-Free Oat Flour 1 & 1/2 Cup Unsweetened Almond Milk (add more milk if needed)

1/4 Cup Tahini (you can also use coconut oil).

4 Tablespoons Pure Maple Syrup.

4 Teaspoons Baking Powder (aluminium free)

1-2 Teaspoons Cinnamon Powder

1/2 Teaspoon Sea Salt

*You can add sugar (1-2 tablespoons) to the batter to make it more sweet and also non-alcoholic vanilla extract for flavor.


For the Flax Eggs:

In a small bowl mix ground flax seeds and water then put aside to thicken.

For the Dry Ingredient Mix:

In a big bowl, mix oat flour, baking powder, cinnamon & salt.

For the Wet Ingredient Mix:

In a small bowl, whisk together the milk & maple syrup.

Separately in a small bowl, mix/whisk together the Tahini + a small part of the liquid mix until smooth, adding a little bit more of the liquid if need be.

Combine all ingredients in the biggest bowl and stir until evenly combined. Set aside the batter for 5 mins.

I used around 3/4 cup of batter for each waffle.


Use desired amount of frozen organic berries (I used strawberries, but you can also use wild blueberries or raspberries), place in a pot and add 1/3 Cup of Pure Maple Syrup. Heat on medium until thawed, mash with a form or place cooled berry mix into the NutriBullet to make it into a smooth jam. Done! Store in glass container in fridge.


Leave a can of full fat coconut milk in the fridge over night (I try to keep one at the back of the fridge always). About 10 mins prior to making the whipped cream, put the bowl in the freezer to cool. Once done, open the can of coconut milk and gently gather all solid parts of the coconut milk and place in the bowl you cooled in the freezer. Add some raw sugar if desired and use an electric whisk to make it into whipped cream! Taste delicious.
